    an hour to churn as it is done by hand and the dash is kept moving up and down. When the dash comes up clean the churning is made. Hot water added in winter to warm the milk as it would "break" when too cold. In summer when the weather is warm cold water is often added to cool the milk if it is too warm.
    The butter-milk is used for drinking and making cakes, and is also given to calves and pigs.
