    After the oatmeal came from the mill it was sifted to separate the husks from the fine meal. The former were left to soak in water for drinking and this was called “sounds” or “súthán”. When that was boiled, it used to be called “flummery” or “boithreán” and used be drank with potatoes or stirabout, when milk was scarce.
