    they are ready they are hoed and grubbed and moulded. About a fortnight afterwards they are moulded again.
    They are sprayed at the end of July and August. We dig them with a potato digger in October. The potatoes for seed are kept in pits and the ones for using in a house. The kind of potatoes we set are, Arran Banner, Arran Chief, Arran Victor, Epicure, Duke of York, Kerr's pinks and Ruby Queens. The people used to make starch out of potatoes long ago. They grated the potatoes down and put them into water and strained them. Then they let the water that was drained settle. Then they drained it again and left the part remaining to dry.
