    up and down when churning and before it is completed the dash is given a rolling motion from side to side to gather the butter. In winter if the weather is cold or frosty hot water is sometimes used to bring the butter on quickly.
    when the milk is churned the butter is taken out of the churn and put into a tub of cold water. cold water is put on it to harden it if it is soft and when the butter is hard enough some salt is mixed with it. It is then made into pound rolls using two butter spades.
    When the butter is taken off the milk, the milk that is called butter-mil. This milk is used for feeding calves, pigs and sometimes it is give to the hens to drink in the summertime. It is also used for baking bread and if boiled again with sugar is good for a cough.
