The small ones are separated from the big ones. Some of the potatoes are called Aran Tonsils, May Queens, Aran Banners, Aran Victors, epicures, and Kerr-Pinks. The people use kerr-pinks, aran victors and May Queens. Potatoes were used long ago instead of Starch. They were grated and let drain in a vessel and what came out of them was used as starch.
