- Long ago there was little or no white flour used in Ireland. The people lived mostly on the produce of the farm.
One of the foods used was colcannon or callaig. It was a wholesome food and much relished by the people. It was made from potatoes in this manner.
They were washed, peeled, and boiled. Then they were pounded in a pot with a turmin.
There was milk added if the potatoes were dry.
Then it was ready to be eaten and each person got his share.
Then he put butter in a hole in the middle and allowed it to melt, then each bit was dipped in it. This was called callaig and dip.- Bailitheoir
