When the potatoes are dug they are put in a long stack about a yard wide and a yard high. This is known as a “pit.” This is covered with a thick coat of rushes, and then clay about six inches deep is put on top of the rushes to prevent the frost and snow of winter injuring them. What is left after the [setts?] are cut are called [lunguns?]. The small potatoes are called “porings.”
