which passed through the lid of the churn and was drawn back and forth, until the butter was made.
Of course in modern times there was a more improved system. The churning was done by means of a windlass turning a combination of boards called beaters, which slap the cream back and forth for a considerable time until the butter is made.
When the buttermilk is all let out through a hole in the under part of the churn which is stopped by means of a timber plug. The butter is then washed with plenty of spring water, after which it is salted.
Then it is made into pounds and two pounds. It is then ready for sale.
