    The potatoes are cut into seed There has to be an eye in every seed on it would not grow
    A bud comes out of the eye and grows to a stalk more potatoes grow on the roots of the stalks. The drills are topped to break the lumps. Then they are grubbed and moulded.
    Then they are sprayed with bluestone or lime to keep off the blight. Some of the potatoes are dug with a digging machine and some are dug with spades. If the ground is dry people dig them with digging machines and if the ground is wet they are dug with spades
    Some potatoes are stored in pits in the field and some are stored in a house. The names of some potatoes are Kerrs Pinks, Arons Bannors Arons chiefs. Ecupares. Ecupares grow best in this district
    Starch was made from potatoes long ago.
