  1. 1/2 stone picked potatoes, grated fine put into a linen cloth and squeezed dry.
    1/4 stone of boiled potatoes, mash fine and add 1lb of flour, and salt to season. Mix all together. Make until shapes or squares and boil for about three hours. When cold it can be fried in dripping.
    To test above the bottom of the vessels in which it is boiled should be cold.
