- In olden times the bread was made of oat meal baked before the fire on an iron for the purpose. Wheat was not grown locally in olden times. potato bread was made with oat meal baked on a griddle. Boxty bread was made especially for hallows eve night. Oat meal bread is made with water and meal.
Boxty bread is made by grating potatoes and wringing them and mixing flour with them. Some people steam the boxty and others bake it in an oven. Some people bake every day and others bake only twice a week. Marks are made on the top of the cake with a knife or some people pierce it with a fork. This is(continues on next page)- Collector
