1. Bread

   

   Roinn Roinn Postáil

   In older times the people ground their own corn and wheat for the making of their bread. Different kinds of bread were made, including, boxty, potato-cake and oat meal bread. When people were making their own boxty there were different ingredients used. These were 1 pound of raw potatoes and one pound of cooked ones, one pound of flour, two teaspoonfuls of salt, buttermilk, and one teaspoonful of soda.

   The raw potatoes were washed and peeled and scraped into a linen cloth. The potatoes were then lightly squeezed catching all the water in a basin. These were then put into another basin and over them the cooked ones are mashed. It was then left until the starch sank and the water on the top was clear. The starch water was then poured out and the starch was scraped off the potatoes. Flour and salt were then added. Enough buttermilk was then added to make a batter. It was then beaten up together and left for a few minutes in the oven before baking.

   A certain quantity was baked for the day. Oat meal bread was usually baked in front of the fire against a support , often a smoking iron. During the Christmas, the people made currant cake. This bread was baked usually in a pot oven.
