    mixed with flour and rolled into thin cakes. Then the cakes are put on the pan to bake. When they are baked they are eaten with butter. Boxty bread is made by getting potatoes and washing and peeling them. Then they are grated with a grater and then it is strained with a muslin bag. Then a handful of flour is mixed with it. Then it is put into an oven and baked well. When the boxty is cold it is warmed on the pan which is well greased with bacon or lard. Then the boxty is eaten with tea. Bread was almost made everyday. A cross is cut on the top of the cake to keep the cake from burning. An oven is always used for baking. Oaten bread is baked on a griddle before the fire until it becomes very very hard. The griddle is made of iron. On Shrove Tuesday pancakes are made.
