  1. Bread was made from wheat and oats in olden times which the people grew themselves. In olden times people made oaten bread and they baked it on a grid-iron, and in many cases they boiled the oaten bread, and they called this Dumplings.
The people used grow beans and peas and make bread from them, and from barley-meal also. They used grate boiled potatoes, and the same quantity of raw ones, and knead them all up together, and then boil them, and this was called boxty.
There was water used in making oaten bread, and milk in making beans and barley-bread. There was pancakes made for St Bridgets, and potatoe cake for November night and Christmas Eve.
The people dried the wheat in an oven over the fire, and they used grind it with querns. There was a quern in every village in olden times. There was one in the townsland of Castlenancy at Mr Hanrahans, and he used grind the corn for all the people in the village.
