    potato-stalks to protect them from the blight. In the month of August the potatoes are dug and they are left in a heep on the ground. Then they are covered with straw and clay to protect them from the frost and rain.
    Starch is made by grating the potatoes. Then the juice is taken from them and it is mixed with hot water.
