  1. The following is some of the bread which I saw being made at home:- Griddle bread, Pancakes, Oaten Bread, Potato Bread, and Pot oven Bread.
    Griddle Bread is made thus:- A half-stone of flour is got first, and a certain amount of it is put into a basin. A certain amount of salt and bread-soda is then put into it so as to make it rise. It is then mixed with butter-milk until it is all stuck together.
    While this has been going on the griddle is beside the fire warming. The cake is then got and spread out flat on the griddle. A knife is then got and a cross is put on the of the cake, from end to end. When this is done the griddle is put on the hearth-stone and a shovel-full of gríosac is put under it. It is left there until it is properly baked on one side and is then turned. When it is properly baked it is put outside the window to cool. When it is cool it brought in and eaten.
