There were two kinds of churns a standing churn and a barrel churn.
The cows were milked twice a day the milk was brought into the dairy, strained into flat round pans called "keelers". |It was left there for twenty four hours then it was skimmed with a skimer or a saucer or the hand.
The skimmer was like a strainer the milk used to go down through it and the cream remained in the strainer.
