Each hen lay an egg every day. All the eggs are saved up and sold to the van-men. These men go around the country buying all the eggs. The duck eggs are the same price as the hen eggs and the turkey eggs are usually sold for sixpence and ninepence. Sometimes when the turkey eggs are scarce they are sold for a shilling. The turkey egg is a litter bigger than the duck egg. There are a brown egg with small brown dots on them. The house that the hens are kept in is called the hen-house. This house is a little smaller than the "byre". Our "hen house" has a wooden roof with felt cloth and tar. The roosts are made of round bits of wood and stuck into the wall. Three boxes are left in the hen-house for the hens to lay in. Straw is fixed in the nests and one egg is left in every box for the nest egg. In the evening the eggs are gathered in and washed. The hens nests are placed on top of the roosts. The hen-house is bedded with heather or rushes every second night. The hen-house is cleaned out once a month and lime is scattered round to keep out diseases.
We have also seven turkeys at home. When the turkeys are young we gave them oatmeal and sometimes oatmeal mixed with buttermilk and hard boiled eggs. When they are two months old we give them potatoes
