  1. How butter was made long ago.
    There were no creameries long ago and the butter was made at home. When the cows were milked the milk was strained into coolers or milk pans. There pans were on stillins along the walls of the Dairy. When the milk was set the cream was skimmed off into a tub. The cream was left in this tub until it was fit to be put into the churning barrel. Then it was churned by hand or by power. When all this was completed the butter was well washed with salt and water. It was then packed into firkins and was ready for the market.
    This story was told to me by my mother.
