    She also remembers the people to keep the butter from May to November and then take it to Carlow.
    They would clean a "keeler" and put the butter in it each week. It would last all these months and would be the same as if you only churned it before you went to the market.

    They would steep the oaten meal in a tub for a week and when it be sour they would strain off the and boil the thick part. This they would put on a dish to cool.
    They used to call this flummery and they would eat it for their supper and breakfast.
