  2. The potatoes are fit for digging about the end of October. First we get the plough and two horses, and plough a drill of potatoes then one comes along on his knees and roots out the potatoes with his hands. This is dirty and disagreeable work especially during wet weather.
    A picker comes behind and picks the table potatoes into a bucket and then transfers them to a cart. When the cart is full it is emptied into a hole about two feet wide and six inches deep. This is called a pit.
