    be left on them. Then the used to be peeled. Then the grater would be out into a timber bucket and the potatoes were grated into a soft pulp. A clean linen cloth would be got and the pulp would be put into it and all the juice and starch used to be squeezed out of it. The dry pulp used to be placed on the loset and a cup of wheaten flour would be put on it. A thin cake would be made as large as the griddle would hold. Then the griddle would be greased with lard and the cake would be put down. This cake used to be turned two or three times in order that it would not be burnt. Then it would be eaten hot with butter.
