  1. In olden days bread was made from wheat and oat-meal. The flour was ground locally with a quern, which ground the wheat and oats. In some very old farmhouses querns may still be seen, they are kept as relics of the eighteenth century.
    Oaten meal bread, wheaten bread, wholemeal bread and flour bread were the chief kinds of bread used. Flour, bread-soda salt and milk were the ingredients useds in the making of bread. Sometimes when milk was scarce or when only a small quantity was to be had about a cupfull of water was added. Bread was generally made every second day. The old custom of putting a cross in the centre of the dough is still in vogue, and the bread
