    as it will go away with the person who came in, but did not help at the churning. Some people put a live coal from the fire under the dash to prevent the fairies bringing the butter.
    It takes about half an hour to churn. We always churn by hand. The dash is moved up and down, at first; but when the milk "breaks", a rolling motion is given to the dash in order to gather the small particles into larger lumps.
    The butter is then made. We pour in a few pints of hot water while the churning is being done. The hot water rises the temperature and this makes
