  1. The bread made in olden times was different to what it is now. Bread was made from wheat grown locally and dried and ground with "querns" that is between two small round flags which were caused to spin round. the same thing was done with oats to grind it into meal. We are told that the wheat or oats was often dried on flags or pots over a fire. Bread was made from this wheaten flour. It was wet with buttermilk and baked on a pan or oven. The bread made from oats was very hard and dry. The meal was wet with water and the Cake was put standing up before a fire until it was baked. It was left standing in a griddle until it was quite hard. People also made Potato Cake, this was made from boiled potatoes which were bruised and mixed with flour and then baked on a pan. Boxty was very often made from potatoes - they were grated on a grater - a piece of tin with holes made in it with a nail and one side of it was very rough
