    the staff passed. The cup ( a wooden one inverted ) fitted vlosrly round the staff, it purpose being to keep the cream down during the process of churning. The churn dash was always moved upwards and downwards until the cjurning was nearing completion when it was given a rolling motion from side to side “ to gather the butter “.
    The subsequent treatment of the butter was the same as described in the case of the barrel churn.
