    two to do the churning they take turn about the dash.
    If a stranger comes in and you churning they are supposed to take a twist of the dash before they leave the house. The churning is done by hand, it is worked round. When the butter is coming on the milk it is very small like pin-heads, and when it is finished it is very big and gathered in lumps in the butter-milk.
    Hot water is added to the cream when starting to churn to get it to a certain degree for churning. In the winter it takes more water than in the summer because the cream is easier churned in summer. When the butter is nearly made you pour in luke warm water to gather the butter on the butter-milk.
    You lift out the butter, out of the butter-milk with a round dish which you call a ladle. Then you put it into a wooden dish, when you have that done you put water on the butter and wash it well. When you have that finished you put salt into the butter and mix the salt
