    trench is then dug about half a foot deep, and the length is made according to the number of potatoes. The potatoes are then all put into the trench and piled up in the form of a pyramid, and a pipe is stuck into the potatoes so that the air may get into them. Then the potatoes are all covered with straw, and then clay is put over the straw and patted down so that nothing is seen but the pipe sticking out. Little channels are then dug round the trench so that when it rains the water will not stick in the trench and destroy the potatoes, but will run down into these channels
