  1. Sowens
    Sowens are made out of shillings that are got in the mill where meal is made.
    There are steeped for two nights first and then the water is taken off them and they are put into a pot or saucepan and fresh water is put on them, they are boiled for one hour, when they are boiling, salt is put on them and when they are boiled, milk is put on them, and then the sowens are put out on plates to cool.
