One farmer not far from Ballinasloe could churn in the most scientific way all day long and never got one grain of butter on his milk. He has tried change of cows and pasture and no use. Even if a stranger churned for him, they could not get butter. This happens occasionally in places. People are supposed to "take the butter." It is supposed to be done by getting out before the first puff of smoke leaves the chimney and saying such words as "Mim Dim" on May day morning. People sometimes go to the working of black magic and find some name of those that work. They sometimes get a charm as to put a sock of a plough to the fire. People make butter three times a week in Summer and twice in Winter. Some people use butter-milk for pigs and others make bread with it.
