Ar an leathanach seo

  1. Long ago the people depended chiefly on the potato for their sustenance. Besides boiling the potatoes they also made them into bread. They used to make stampy and potato cake which are still made and are looked upon as a delicacy whereas they were the ordinary food of our grandfathers. To make "stampy" the potatoes are first washed and peeled, then a grater was provided by opening a cocoa tin and making holes in it then it was nailed on a piece of timber and on this the potatoes were grated, and the pulp squeezed in a strong calico bag. Then it was kneaded with sour-milk or cream after a pinch of salt had been added. It was put into a pan very thinly and when it was baked on one side it was turned over to bake on the other side. It is very tasty if eaten with butter when hot.
    Long ago the men used to work in the morning before eating their breakfast and the women used have a hot cake or a pot of potatoes ready for them. They used to have yellow meal gruel for their supper.
