- When the farmer brings the oatmeal home from the mill the housewife makes an oatcake, and it is considered a great treat. Long ago oatbread was the sort of bread used in every house in the country. It was, and is still considered a healthy bread.
When making oatbread take out some oatmeal, then add a pinch of salt to it. Wet it with boiling water. Mix it well to make it stiff, and roll it out flat and bake slowly before a clear bright fire, on a triangular shape made for the purpose.- Bailitheoir
