    Several people around the district salt bream and hang them up to dry.
    The people who salt bream have to cut them down the back bone, and clean them. When they are thoroughly cleaned they wash them in cold water. when this is done, they salt them, and put them very near the fire to dry.
    Some people put them up the sides of the chimney to dry.
    Roach and large perch are sometimes salted. Pike are not usually salted but they are sold for the use of people.

    This story was told to me by my (mother) uncle. She is about 50 years of age is occupation is a farmer.
