- Farming is the chief industry carried on in this district. The farmers keep milk cows so as to have milk and butter. The butter is seperated from the milk by churning, and the milk is churned in a churn.
There are many kinds of churns, but the oldest churn is the dash churn. The dash churn can be worked by the hand or by a horse. Long ago the churns were much larger than they are at present, as the sweet milk was churned then, but now-a-days the cream is first seperated from the milk, and therefore a smaller churn is needed.
A churn is made of oak wood with iron hoops around the outside of it. When churning there is a lid on the churn so as to keep the cream from spilling out. The height of our churn at home is about three feet.
The cream before churning is placed in a crock and left there(leanann ar an chéad leathanach eile)
