- Boxty bread was made in the locality but that was many years ago.
There is a place called Dysart near Mullingar where it was in general use, as shown from the following rhyme known about seventy years ago
"Boxty bread it took ahead
And travelled through the nation
Until it came to Dysart town
And there it took its station."
In the making of "Boxty " bread the potatoes were not cooked before hand as in potato cake.
