The butter is made twice a week both Winter and Summer.
The churn is moved upwards and downwards and some times it is given a rolling motion.
Hot water is sometimes added if the milk is cold and will not churn.
The plug is taken out and the butter-milk is let flow into the crocks.
Then the churn is turned up side down and the butter is let fall out on the butter-dish.
Then the butter is washed with cold water. Then a knife is put through it and the butter that is on the back of the knife is good and the butter that is on the edge of the knife is bad for there are hairs in it.
