When the potatoes are taken out they are stored in pits which are made by digging a retangular hole in the ground about a foot deep. The potatoes are put in and covered first with straw and then with mould. The mould is well beaten down with a spade and this good thick covering protects them from the frost of winter.
The most popular varieties grown around the Cooley district are Kerrs pinks, Banners, Consols, Golden Wanderers, Great Scotts and Arran Victors.- Bailitheoir
