This is the way the people of long ago used to make their own starch. They used to peel the potatoes and wash them thoroughly. They used to grate them very finely and put them into a prepared vessel. Pour boiling water over them and let it set. It used to turn out as good if not better than starch of nowadays. The old people used to call it potato starch.
Many of the stiff white collars and fronts of the grand old man of the last generation owed their remarkable stiffness and brilliant whiteness to potato starch.
