- Before creameries were established, butter used to be made at home.
The cows were milked and the milk was put to "set" in pans and in the winter a tub of hot water was put in the centre of the dairy to raise the temperature and thus make the cream rise more quickly. After about twenty-four hours the cream was skimmed off the milk and put in a cream vessel.
After about two days the cream was put in the churn and churned into butter.
The butter was put into pure spring water and well washed and pressed so that(leanann ar an chéad leathanach eile)
