Ar an leathanach seo

  1. The bread most commonly used in former times was home made. The bread was made from rye flour and wheaten flour. Rye bread was darker and sweeter than wheaten bread. The rye was grown mostly in re-claimed land. The flour was milled in Millstreet. It is from that the town got its name. The first mill was situated at the miller's bridge a mile outside Millstreet. In later years there was a mill built outside the town. which was owned by the O'Donnells of Coolmore House. There are still the remains of querns in some country homes in the parish.
    The different kinds of bread were stampy, potato-cakes, oaten-bread and meal-bread water was used in the making of stampy and potato cakes and "yellow Johnny".
