Potatoe Cake.
This was a cake that was very much used in olden times. It was also called "Flour Bread".
The potatoes were the chief food of the people and they never wasted any of them. If there were any left over after the meals they were made into bread.
The cold potatoes were peeled and then bruised in a del(f) or tin basin. This bruising was usually done with a tin porringer using the bottom to press down on the potatoes and in this way they were made as fine as powder.
Then there was a taste of salt and some flour added and this was well mixed. If it were too dry a little milk was added to soften.
It was then rolled out to about the depth of an inch. The rolling was done with a bottle,
