- (ar lean ón leathanach roimhe)"Boxty Bread" was made with raw potatoes. the potatoes were washed and peeled next they were scraped on a scraper made with a bit of tin and holes bored in it. They rough side of the holes were used for scraping potatoes. This was placed in a basin. Next a bag or pocket made of clean white cloth was got and the raw scraped potatoes put into a bag and the water squeezed out of it. Next this dry stuff was placed in basin with salt, flour and a little butter kneaded together. Then it is made into a cake and placed on a hot pan without a lid and turned occasionally. Then it is eaten with butter. It is nicer when hot.
