- (ar lean ón leathanach roimhe)When the churning is made people see the butter on the handle of the churn-dash and on the top of the milk. Then the churn is rocked gently to and fro to gather the butter together.
It is taken out by hand and put into a butter dish. It is then washed and the buttermilk taken out of it. It is then salted to preserve it. Then the various parts of the churn are washed. People keep the butter for their own use but where there is not a family it is sold to the shopkeepers. We use the buttermilk for putting in cakes and it is also good to drink it.P.S.
When the churn-dash is taken out, the Sign of the Cross is made on the mouth of the churn with it.
