- The most common bread made in this district is bread made from wheat. Long ago, Tom Sheerin of Derrynine owned a quern. Anyone that wanted wheat ground got it ground by means of the quern, and then they made their own bread from the wheat.
Potato-cake, boxty and oaten-bread are made in this district. Potato-cake is made by boiling potatoes and peeling them. Then they are mixed with flour and soda. When they are mixed well, they are rolled flat and cut into quarters and baked. Each of these quarters is called a "farley". Milk is used in kneading except when making the oat-meal cake.
