    downwards, and when nearly completed, it is given a rolling motion to gather the butter together. People know when the butter is done when the churn dash is free of small particles of butter. Water is poured in during the process to bring the milk to a certain temperature. When the churning is finished the butter is gathered in one large lump. Then is is lifted out on a butter dash by means of a butter spade. Then spring water is poured on it in order to free it from buttermilk. Then it is salted and made into rolls. Stories are told of people who churned for days and nights and nothing came on the milk but froth. They went to a priest who gave them blessed water and when this was poured on the dash, butter came on the milk.
    Butter milk is used for the making of bread and the feeding of calves and pigs
