  1. Butter Making.
    The oldest method of churning was with the handdash. the butter was made with the hand, and salted, then put into a firkin which was made of wood the shape of a small barrel and bound with sally hoops. The usual amount which each held was about 1 1/2 cwts. of butter. Then it was stored in the dairy from six to twelve months. All was taken to Carlow to be sold. He remembers taking butter to Carlow 65 years ago.

  2. Coopering.
    The Coopering trade at that time was a prosperous one, as there were four men kept going constantly, by the name of Boylan of Clarbaricummn making firkins for the people. There is oneof them living at the present time at Graiguenasmutton cross roads.
    To preserve butter in firkin a small amount of nitre would be put in the pail before milking the cows.
