  1. I heard my mother say that long ago, the people around here used to make Boxty Bread. I never saw it made nor eat it, but mother told me that Grannie used to make it often.
    She explained to me how it was made.
    It is made chiefly out of raw potatoes, any kind of potatoes makes it but of course the sweetest potatoes make the sweetest bread.
    Here the the way Grannie made it. She got a grater, a dish, and washed raw potatoes. She put the grater into the dish, and grated or ground the potatoes into pulp. When she thought she had enough ground to make a cake, she empties the pulped potatoes out of the dish on to the table.
    The she pressed the pulp until she got it into a round shape, but before she did that she put some flour and salt into it. Some women also put a few boiled potatoes into the mixture.
    She then put the baked cake on the pan, put it on the fire, and left
