It is a local custom in our district that anyone who comes in while the churning is going on must take the churn dash and do a little churning as the people say if this is not done there will be no butter on the milk.
Sometimes cold water is put in on the milk while churning. This water brings up all the butter on the top of the milk.
The churn is then rocked from side to side and all the butter settles on top of the milk.
The butter is then taken up in a basin by means of a small wooden dish which is called a "copin."
It is said that no stranger should be let in on one door of the house and out on the other door during churning time lest he should take away the butter.- Bailitheoir
