- Long ago there were many different kinds of bread made. Wheat, barley, and rye, were grown and these were ground by means of a grinding-stone or a quern. A quern consisted of two stones one on top of the other, and between these, the grain was crushed. Oats were also ground and these were made into oatmeal.
When the grain was crushed, salt, soda and skimmed milk were added to make the bread. A cross was put on top of the bread and people said if they did not put that cross on it, it would not rise. The bread was put on a griddle to(leanann ar an chéad leathanach eile)- Bailitheoir
