- When the milk is milked from the cow, it is put into a big tub or cooler. Then it is strained into pecks or pans and left until the cream is fit for skimming, which then thick and sour enough is put into the barrel to make butter. Then it is turned by either one or two until you have butter and butter milk. All utensils used in the making of butter must be thoroughly scrubbed and scalded. Of old they joined in the filling of ferkins. The house keepers lent the butter to one another according to their wishes. In my schooldays we used make butter in the barrel with a horse, the barrel was placed end ways to the wall with an iron spindle attached to it. An opening was made in the wall so that the spindle would reach the axle of machinery outside which was laid and fastened to the ground, a [?] bit machinery with cogs, there was a long beam on to which the horse(leanann ar an chéad leathanach eile)
